Small chili, serious heat.
Dalle khursani grows small and round in the hills around Ilam, and it's one of the hottest chilies Nepal grows. We pick them at full red, sun-dry half the batch for depth, then grind the rest fresh so the heat stays sharp. Mustard oil and a pinch of timur round it out. A little goes a long way on rice, noodles, or eggs.

The Story Behind It
Every autumn, the same three families in Ilam set aside a section of their garden just for dalle. They've done it for as long as anyone can remember, apparently starting with someone's great-grandmother who refused to eat rice without something to make her sweat a little.
