Lentil Bara with Timur Achar
Bara is a Newari lentil patty, fried flat and usually topped with a fried egg. Timur achar takes the place of the usual chili paste.

Drain the lentils and grind to a thick, smooth paste with minimal water.

Whip the batter by hand for a few minutes until it turns light and airy.

Season with ginger and salt, then spoon into flat rounds in a hot, oiled pan.

Fry until golden on both sides. Crack an egg on top partway through if using.

Top with a spoon of timur achar before serving.
Ingredients
- 2 cups black lentils (maas dal), soaked overnight
- 1 tsp ginger, minced
- Salt to taste
- Oil for shallow frying
- 4 eggs (optional)
- Aamaa Achar timur achar, to serve
