Everyday Dal Bhat with Radish Achar
The plate most Nepali households eat daily: lentils, rice, a vegetable curry, and achar on the side. This version keeps the curry simple so the achar can do the talking.

Rinse the lentils and boil with turmeric and salt until soft, about 20 minutes.

In a separate pan, temper cumin seeds in a little oil until they crackle.

Add garlic and potatoes, cook until the potatoes are fork-tender.

Stir the tempered potatoes into the lentils, or serve as a side curry.

Plate with steamed rice and a generous spoon of radish achar on the side.

- 1 cup yellow lentils (masoor or moong dal)
- 2 cups steamed rice
- 2 potatoes, cubed
- 1 tsp cumin seeds
- 2 cloves garlic, minced
- 1 tsp turmeric
- Salt to taste
- 2 tbsp Aamaa Achar radish achar, for serving
